Abstract

Fish is an easily damaged food and can not be stored for long. Preservatives used so far are synthetic preservatives. Kluwak has the botanical name of Pangium edule Reinw. In kluwak seeds could be used as preservatives because in kluwak seeds contain chemicals that can inhibit the development of microbes in fish. Therefore, this study was conducted with the to know the presence or absence of organoleptic changes after soaking with kluwak seeds. This test uses qualitative and organoleptic methods with identification of the Cyanide and Tanin Acids and take kluwak seeds weighing a few grams in water with the fish included and observed every day for 6 days of observation. This research was conducted at the Laboratory of Food and Beverage Analysis of Setia Budi University Surakarta in May 2018. The qualitative results of the presence of Cyanide Acid on kluwak seeds positively contained cyanide prior to the experiment and negative cyanide after removal. The result of qualitative test of Tanin on negative kluwak seeds did not contain Tanin. In the immersion of fish with kluwak seeds obtained the results of the control lasted for 1 day, 6% lasted for 2 days, 8% and 10% of fish survived for 3 days which was assessed using the freshness parameter of freshness of fish in research advancing on Indonesian National Standard 01-2729.1- 2006.
