Abstract
Vitamin C is one of the nutrients that act as antioxidants and effectively deal with free radicals that can damage cells or tissues. Spinach is a plant in which contained nutrients and vitamins. The purpose of this study was to determine the levels of vitamin C in spinach leaf species. This research method is done by descriptive experimental using UV-Vis spectrophotometry with reagent 2.6-dichlorophenol indofenol. The samples used in this research are spinach leaf, red leaf spinach (Amaranthusgangecticus L.) and large leaf spinach (Amaranthushybridus L.). The results showed vitamin C levels found in red spinach leaves of 0.085 ± 0,00991% and 0.023 ± 0,00991% large spinach leaves.
