Abstract

Jam is a preserves product which has soft texture which containing crushed fruit mixed with sugar is also accompanied by the addition or without the addition of water and cooked until the sugar concentration is 50-65%. To maintain the stability and quality of jam, usually is added a preservative. The preservatives used to prevent damage of the product that is generally characterized by the growth of yeasts and molds. One of preservatives are used is sorbate in the form of acid or salt. Sorbic acid is a preservative that effective to attacking fungi and yeasts in food with acidity level is 6.5. The purpose of this research are knowing the presence or absence of preservative potassium sorbate on the jam, determine level potassium sorbate counted as sorbic acid on the jam with UV-Vis spectrophotometry and find out the appropriateness of potassium sorbate counted as sorbic acid levels in these jam by Permenkes 722/Men.Kes/Per/IX/1988. The samples are jam with plastic and glass bottles packaging. Determination sorbic acid level performed using UV-Vis spectrophotometer with ether solvent, on wavelength 248 nm. The test results of samples is the fourth samples positive containing potassium sorbate. The level of sample A in amount is 0,4866 g/kg, sample B is 2,2990 g/kg, sample C is 0,5419 g/kg and sample D is 2,0897 g/kg. Potassium sorbate counted as sorbic acid level in accordance with Permenkes 722/Men.Kes/Per/IX/1988 are sample A and sample C from the fourth samples because the level in amount is < 1 g/kg.
