Abstract

The existence of the skin of a banana dialam enough abundant , is only used as fodder and can become a waste organic pollute the environment. The purpose of this research is the determination of total phenol on the skin of a banana that can be used as antioxidant. Filtrat the skin of a banana kepok made based on the time of warming the most steady in temperature of 80 for 1,5 hour , 2 hours and 2,5 hours also in the warming for about 2 hours at a temperature 40 , 60 and 80 , next strained to get filtrat. Filtrat reaction with reagent folin ciocalteau and solution Na2CO3 7,5% next read absorbansinya by using Spektrofotometri UV-Vis. The research results show that variations influence time heating and influence temperature affect the total phenol. The research results show time heating and the temperature of its effect on the total phenol. Time warming 2 hours obtained levels of 1222,73 steady mg/L filtrat and to the influence of temperature of 80 steady obtained levels of 670,455 mg/L filtrat.
