Abstract

Soy Milk is a white liquid made with basic ingredients from soybeans. However, there are some soy milk production circulating among the community did bacteriological test to determine consumable or not. This study aims to determine the bacteriological quality soymilk outstanding traditional market and modern market based Quality Requirements Microbial Contamination by SNI 01-3839-1995. The study was conducted in January 2016 bertempatkan in Microbiology Laboratory of the University of Setia Budi Surakarta. Tests on three samples of soy milk includes test Total Plate Count, MPN coliforms, MPN Escherichia coli, Staphylococcus aureus, and fungi. The results of this study found the following results: ALT sample A (1,2x103) B (2,7x104) C (2,8x101), MPN coliforms and Escherichia coli samples A and B (2400/ml) C (0), Salmonella sp samplesA, B, C (negative), Staphylococcus aureus samples A, B, C (0/ml), while the figure Kapang A sample (1.1 x 101) B (3.0 x 101) C (1.0 x 100).
