Abstract
Corned beef is one of fast food products containing food preservatives of nitrites. Over-consuming nitrites contributes to methaemoglobinemia formation which leads to cancer. Ascorbic acid is a compound which is able to oxidize nitrites into nitric oxides. This study was aimed to investigate the optimum conditions of the greatest nitrite content decreases in corned beef samples after being soaked in ascorbic acid with various concentrations and variations of soaking durations. This study was an experimental research. One of corned beef brand X was identificated for the initial nitrite content after being soaked in ascorbic acid concentrations (0.25; 0.50; 1.00)%. After the sample received treatments with ascorbic acid concentrations, maximum decrease was obtained in certain concentrations. Further, the sample was soaked for 15 minutes and 30 minutes with the previous concentrations which experienced a maximum decrease of nitrites. This research was done using UV-Vis spectrophotometry. The results indicated that nitrite content in the samples didn’t exceed permissible limit set in Regulation of the Head of the Indonesia’s Agency of Drug and Food Control (BPOM) No. 36 Year 2013, which was 12.6243 mg/kg. The reduction of nitrite content in the concentration of 0.25%, 0.50%, and 1.00% were 13.48%, 54.51% and 56.19%, respectively. Meanwhile, the decreasing of nitrite content in the soaking time of 15 minutes and 30 minutes were 56.19% and 96.98%. This study showed that the greatest reduction of nitrite content occurred when the samples was soaked with ascorbic acid concentration of 1% and the soaking time of 30 minutes.
