Abstract
Meat is a source of high-protein and foods are often consumed by humans. Meat can be derived from pets such as chicken, cow, goat, buffaloe, and pig. In addition to meat, other sources of protein can be obtained from fish, tofu, tempeh. The majority of Indonesian people choose to consume Broiler chicken meat as a protein source because cheap price and easy to obtain. Broiler chicken is a broiler, which bred intended only to be taken the meat. The study was aimed to determine whether the quality of Broiler Chicken Meat qualify bacteriologically according to Indonesian National Standard or not. The test was conducted at Setia Budi University of Microbiology Laboratorium on December 28th, 2015 - January 2nd, 2016. The test was used three Broiler chicken meat samples from traditional market with code A and B and Supermarket with code X. Based on the results of bacteriological test on Boiler chicken meat samples of A, B, and X in the ALT test obtained results of sample A 1.3 × 106 CFU/g, sample B 2.4 × 106 CFU/g and sample X 1.1 × 106 CFU/g. In MPN Coliform test obtained results of sample A 2400/g, sample B 2400/g, and sample X 2400/g. In E.coli MPN test obtained results of sample A 2400/g, and sample B 1100/g and samples X 210/g. Test of Staphylococcus aureus obtained result 0 CFU/g and test of Salmonella typhi obtained result in all three samples were negative. From the test results could be concluded that Broiler chicken meat samples of A, B, and X derived from either traditional market or supermarket did not meet qualify bacteriologically by the Indonesian National Standard.
