Abstract
Soymilk is a beverage that contains high protein. Home-made soymilk products (home industry) have been found in a variety of flavors and an economical price. The downside of home industry soymilk is the absence of the nutrient content label, so that people do not know exactly how much protein and other nutrient content. Research was aimed to determine the soluble protein content in soymilk using Biuret method. Soymilk was obtained randomly in Mojosongo region, Surakarta. Each soymilk sample was taken of 1 ml and then it was centrifugated to separate supernatant and precipitate. Supernatant was added with Biuret reagent and its absorbance was measured to obtain the levels of soluble protein. Absorbance measurement was performed using a UV-vis spectrophotometer at a maximum wavelength of 559 nm. The soluble protein content of soymilk in sample A, B, C, D, E, F, G, H, I and J were 2.64%, 1.35%, 0.079%, 1.48%, 2.36%, 2.23%, 2.69%, 1.36%, 2.21% and 2.15%, respectively.
