Abstract
Salacca edulis (Salacca zalacca) is considered one of the most favorite fruits because of its sweet taste. The nutrition and phyto-nutrient contained in the fruit are potential to help improve diet program. Salacca edulis can be consumed both as a fresh fruit and candy. This fruit contains some chemical components, one of which is vitamin C. Vitamin C is one of nutrients playing significant role as antioxidant and is effective to cope with free radical which may cause cells or tissues to damage. A research on vitamin C content in Salacca edulis candies is required to be carried out to provide information on vitamin C content in Salacca edulis candies. The research on vitamin C content in Salacca edulis candies was conducted using iodimetry method, by directly nitrating materials (substances) determined with iodine standard solution and amylum indicator. On the basis of the research results, it is concluded that the vitamin C content in Salacca edulis candies is as follows: sample A is 17,56 mg/100g materials, sample B is 19,24 mg/100g materials, and sample C is 17,10 mg/100 g materials.
