Abstract

Black cumin (Nigella sativa L.) seed oil is one of herbs that have the potential to have a number of pharmacological activity. The purpose of this study was to determine the effect of variations emulsifiers of tragakan and CMC sodium in production emulsion of black cumin seed oil to physical stability of emulsion and determine the concentrations of tragakant and CMC sodium from emulsion of black cumin seed oil with the best physical quality. Black cumin seed oil was made in emulsion using wet gom method. Black cumin (Nigella sativa L.) seed oil was made in emulsion with variations of tragakan and CMC sodium of 5%:3%; 3%:1%; 1%:1%. Then, each formula tested organoleptic and stability of emulsion with the same treatment. Stability test performed as follows: viscosity test, phase separation ratio test, redispersibility test, centrifugation test and determination of emulsion type. Then, the data were analyzed using statistic by one-way ANOVA and continued Post Hoc test with significance level of 95%. The study proves that black cumin (Nigella sativa L.) seed oil could be made stable emulsion preparation. From test results shows formula with concentration of tragakan 3% and CMC sodium 1.5% meet emulsion requirement and more stable than other formulas. Keywords: emulsion, black cumin, tragakan, CMC Na
