Abstract

Kikil is a layer that wraps the foot bones and toes cows without feathers attached on it. Many found kikil products containing formaldehyde as preserved. Formalin is a solution that is colorless and smells very piercing. Formalin contains about 37% formaldehyde in water, usually up to 15% methanol added as a preservative. Formalin is known as a pest killers (disinfectant) and is widely used in the industry. Formalin widely abused as a preservative for food. This study aims to establish the levels of formaldehyde are visible spectrophotometry in kikil circulating in the market area of the solo. Tests were performed on formalin assay in kikil, qualitative testing using KMnO4 solution, whereas in quantitative testing includes the determination of formaldehyde levels in kikil with visible spectrophotometry method. In principle, the addition of formalin with nash reagent produces a yellow color, then read at a wavelength of 214.2 nm. Based on the research results can be determined that the three positive samples contain formaldehyde and formaldehyde levels in a sample of kikil A of (0,0293 ± 0,0002) % w/w, the sample kikil B at (0,0842 ± 0,0002) % w/w, and the sample kikil C at (0,1276 ± 0,0522) % w/w.
