Abstract
Vitamin C called also of ascorbic acid is one of the nutrients that are useful as anti oxidant and effective to reduce free radical. Garlic is including the plants that besides can be used as seasoning cook can also be used as a drug. The purpose of this research is to know if there are vitamin C in garlic and how the measure. The research uses a method of UV-Vis spectrophotometry with aquadest as a blank. Qualitative test introduction done by test by the addition of reagents. Reagents which used are solution of Iodine, FeCl3, Fehling A and B and solution of KMnO4.The next thing done is quantitative test. The quantitative started by making raw solution of vitamin C. The determination of operating time done for 15 minutes with interval of a minute. Determination of the length of maximum waves on 240-280 nm. The determination of raw curve using 5 concentration 3,54 ppm; 4,7 ppm; 5,9 ppm; 7,08 ppm and 8,26 ppm. The determination of levels using the equation linear regression y = a + bx. The result of this research qualitatively show that there is vitamin C in garlic and in quantitative manner obtained vitamin C levels of 0,121 % ᵇ/b ± 0,0068.
