Abstract
Mole crab (emerita emeritus) was important for human healthy because it contained omega 3. Red rice flour were used as filler to increase the effects of therapy mole crab in lowering cholesterol levels. This study aimed to determined the effect of red rice flour so it was obtained the best formula that had the physical quality of the granules and good taste response. This study consisted of five formulas used wet granulation method, namely: F I (200 grams powder dry mole crab with 50 red grams rice flour), F II (200 grams dry mole powder crab with 100 grams red rice flour F III (200 grams dry mole crab powder with 150 grams red rice flour), F IV ( 200 grams dry mole crab powder with 200 grams red rice flour), F V (200 grams dry mole crab powder with 250 grams red rice flour). The granules were formed tested physical properties of the granules and the taste responses were analyzed by statical test used one-way ANOVA. The best formula of mole crab’s granule was formula I, which contained 200 grams dry mole crab powder with 50 red grams rice flour. The result showed sicnificant difference in variations of dose of red rice flour on the physical properties of granules but no showed significant difference on taste flavor response.
