Abstract
Processing tea (Camellia sinensis) in Indonesia in different ways there is black tea, tea and white. Tea contain of catechin for as free radical scavenger. This study aimed to determine the antioxidant activity of steeping white tea, green and black, and the highest antioxidant activity between of them. Steeping tea in antioxidant activity test by dividing steeping tea into 5 series of concentration. Antioxidant activity was determined by measuring steeping tea ag ainst DPPH using a UV-Vis spectrophotometer at 516 nm wavelength with a quercetin comparation. The result is treated using a linear regression equation to obtain the value of inhibition, then analyzed by Oneway ANOVA Tukey test. The results showed that steeping white tea had inhibition value 125,48 ppm, steeping green tea 143,32 ppm and steeping black tea of 251,45 ppm. The conclusion obtained is that inhibition values indicate that green tea and white tea have moderate antioxidant activity and black tea has weak antioxidant activity. Steeping white tea has a higher antioxidant activity. Keyword : tea, DPPH, antioxidant, free radical
