Abstract
Ketchup is a fermentation extract of beans that mixed with other materials which ara use to improve the flavor on food. Lead is heavy metal that if go into the body through the food will be accumulated in continually and long term can cause toxicosis. This research in order to know the content of lead that included in some sweet and salty ketchup by using the method of atomic absorbtion spectrofotometric. Four samples of sweet and salty ketchup are choosen in random. They’re weighed in ± 5 grams of petri porcelain, then they’re ovened in the temperature of 110 oC till dried. These samples are ashed in a muffle furnace of 550 oC, dissolved with 5 ml of aquaregia, entered on dosage flask and add with aquabidestilata till the limit by using atomic absorbtion spectrofotometric. This analysis shows that the fourth of the samples contain lead. The content of lead in sweet ketchup A, B, and salty ketchup C, D are 0,588 ± 0,169 mg/kg, 0,764 ± 0,276 mg/kg, 0,853 ± 0,287 mg/kg, 0,681 ± 0,091 mg/kg. All the content of ketchup samples, sweet and salty are under 1,0 mg/kg so can be declared that they still fill requiremdent that decided by SNI.
