Abstract

Cutlery is an important tool for the process of serving, providing and eating food. Washing equipment is very important to know fundamentally, with good washing will produce clean and healthy equipment. The purpose of this test is to determine the number of total plate count and identify the bacteria Escherichia coli, Salmonella and Staphylococcus aureus found in the cutlery used in the Surakarta Mental Hospital. This test was conducted in April 2019. The population in this test was all cutlery in the nutrition installation at the Surakarta Mental Hospital. While testing of swab feeding samples was carried out at the UPT of the Sebelas Maret University Integrated Laboratory. The number of total plate count must meet the standards of Permenkes Number 1096/MENKES/PER/VI/2011, total plate count must be 0 cfu/cm2. The test results showed the total plate count in 22 sample groups showed colony is 0 cfu/cm2 and 2 groups of samples showed colony is 2 x 101 cfu/cm2 and 3 x 101 cfu/cm2 and identification of bacteria in 24 sample groups in the Nutrition Installation of Surakarta Mental Hospital showed that there were no bacteria Eschericia coli, Staphylococcus aureus and Salmonella.
