Abstract

Rusip is a traditional food from the Bangka-Belitung region form of preserved fish products produced from the fermentation process of several types of bacteria, especially lactic acid bacteria (LAB). The results of the fermentation are mostly bacteriocins and lactic acid compounds which have the potential to inhibit pathogenic bacteria. This study aims to test the potential of metabolites produced by LAB in Rusip products against Escherichia coli ATCC 25922 and Staphylococcus aureus ATCC 25923. This research conducted in several stages : production Rusip product; bacterial isolation in Rusip products with streak plate method on MRSA; isolation of metabolites produced by bacteria in Rusip products; testing the potential of metabolites by LAB in Rusip products with wells diffusion and dilution methods. Data analysis using ANOVA method. The results showed the metabolites by LAB in Rusip's products had antibacterial potential against E. coli ATCC 25922 at concentrations of 200 ppm with inhibitory zones of 8.67 ± 0.57 mm and in S. aureus ATCC 25923 with inhibitory zones 6.67 ± 0.57 mm. The minimum inhibitory concentration both bacteria is 200 ppm. The minimum kill concentration in E. coli ATCC 25922 is 400 ppm while in S. aureus ATCC 25923 is 800 ppm.
