Abstract
Soybean tempeh is a fermented food product by Rhizopus sp. and potential as a source of vegetable protein. Soybean tempeh standards in ISO 3144-2015 showed coliform contamination limit of a maximum of 10 APM / g and Salmonella sp. Negative / 25g. Coliform and Salmonella sp is a marker that is used as the primary standard or benchmark in a manufacturing of food products in the industry. This study aims to detect the presence or absence of coliform bacteria and Salmonella sp. tempeh on banana leaves and plastic packaging as well as whether the tempeh products already meet the maximum standard microorganism contamination in accordance with ISO 3144-2015. This study uses MPN (Most Probable Number) by with Presumtive Test, Confirmative Test, and Complementary Test, as well for the detection of Salmonella sp. with media Salmonella Shigella Agar. The results showed that tempeh produced with banana leaves and plastic packaging in getting positive results for coliform bacteria contamination and negative results for Salmonella. The test results of samples tempe plastic packaging from 5 samples tested contained two samples of tempeh has met eligibility requirements in accordance with ISO 3144-2015, Soybean Tempe.
