Abstract
Vitamin C, also known as ascorbic acid, is a water-soluble vitamin, which can be obtained from fruits including papaya (Carica papaya L). This research performs qualitative and quantitative tests of vitamin C on fresh fruit and wet candied papayas with UV spectrophotometry. The samples in this study were the papaya fruit (Carica papaya L) and 4 samples of the wet confectionery products sold in supermarkets and fruit stores. Qualitative test based on the ability to soften the color of the reagent from the solution of Iodium, the KMnO4 solution and the formation of deposits with the solution Fehling A and Fehling B. On quantitative tests with UV Spectrophotometry performed at maximum wavelengths Λmaks = 266 nm, with Operating time on the 2nd minute. Qualitative and quantitative test results in UV spectrophotometry show that in fresh fruit and candied papaya (Carica papaya L) contains vitamin C and its test successively at 0.02% b/b; 0.04% b/b; 0.03% b/b; and 0.05% b/b indicating there is a meaningful difference.
