Abstract
Peanuts are much used as processed foods popular in public. One of the processed peanuts is peanut sauce on Ponorogo chicken sate. The purpose of this study to calculating of Kapang Khamir number and identification contaminant fungi that grows on the chick peanut sauce Ponorogo in the Surakarta. The growing mushroom may be derived from the materials and equipment used or the hygiene of the seller. Peanut sauce on Ponorogo chicken sate obtained from 5 different sellers in the area of Surakarta. Calculation of Kapang Khamir number on peanut sauce by plate count method. Dilution on the sample is done up to 10-3. The medium used is Dichloran Rose Bengal Chloramphenicol Agar (DRBC). The results of the calculation of kapang khamir and identification of contaminant fungi in sample A : 3.0 x 104 colony/gram and found Cladosporium cladosporioides, in sample B : > 6.0 x 104 colony/gram and found Cladosporium macrocarpum, in sample C : 2.9 x 103 colony/gram and found Aspergillus glaucus, in samples D : > 6.0 x 104 colony/gram and found Cladosporium herbarun and Moniliella acetoabutens, on sample E : 5.3 x 103 colony/gram and found Epidermophyton Key Word : Peanut sauce of Ponorogo chicken sate, calculation of kapang khamir, identification contaminant fungi
