Abstract
Ice cream is a processed product with a sweet taste, the number of ice cream enthusiasts to make the producers compete to create a product with a variety of brands and prices of the level of cheap to expensive. People assume that in making ice cream does not necessarily use pure sugar but by adding saccharin as a substitute for sugar. Basically synthetic sweetener is not just saccharin, but there are other sweeteners such as aspartame cyclamate, etc. Comparison of prices and places to buy ice cream is different, does not affect the sweetness of the ice cream is the reason the author to do this research. The research was carried out in the laboratory of Testing Center and Quality Certification of Surakarta, using ice cream samples are grouped into A, B, C, based on where to buy ice cream. Identification is done qualitatively. The results of the study qualitatively showed that in samples taken from three different places of purchase showed the results of the three samples did not contain saccharin, but all three positively contain cyclamate. The test results show that the place of purchase of ice cream or brand does not close the possibility of adding synthetic sweetener. Keywords: Saccharin, Cyclamate, Ice Cream, Qualitative Test.
