Abstract

Vitamin B1 much found on food stuffs. They are the main source, among other things come from groins, cereals, and beans such as peanut (Arachis hypogaea L.). Peanut can eaten fresh, boiled, fried or roasted with temperature variation. The aim of this research was to know the influence of temperature againts vitamin B1 concentration on peanut. This research is done with High Performance Liquid Chromatography (HPLC) method toward peanut (Arachis hypogaea L.) at room temperature, temperature 800 C and temperature 1000 C with different temperature, use C18-RP coloum length 30 cm, UV-Vis detector with detection wave length 236 nm, acetate: acetonitril (90:10) as a mobile phase and current speed 1.0 ml/ minutes. And quantitative method that used is external standart with technics addition standart sample which is continued with SPSS One Way ANAVA method. Result of this research explains that temperature influences on determination vitamin B1 concentration of peanut that can showed so much the higher of warming temperature which given, so much the lower vitamin B1 that implied on peanut. Vitamin B1 concentration that obtained at room temperature is 0.0654 ± 0.0023 (% b/b), temperature 80oC is 0.0483 ± 0.0066 (% b/b) and temperature 100oC is 0.0241 ± 0.0018 (% b/b).
