Abstract

Processed Food which is produced, imported and circulated in the territory of Indonesia must meet the requirements for food safety, quality and nutrition. Processed Food safety requirements must be met to prevent Processed Food from possible microbial hazards. So it is necessary to know whether packaged beef sausage products circulating at Sukaharjo Kartasura Market are suitable or not for consumption and whether they are in accordance with BPOM standards. This research was carried out by using the scatter plates count on the surface of the media for testing ALT, Enterobacteriaceae and Staphylococus aureus. In this method the samples were examined by diluting 101, 102, 103, 104, 105 for ALT testing and 101, 102 for testing Enterobacteriaceae and Staphylococus aureus, the diluent and media used for testing were sterile physiological NaCl, PCA media for ALT, Enterobacteriaceae EA media and MSA media for Staphylococus aureus. In the Salmonella sp test, the test method was used with SSA selective media with pre-enrichment using peptone buffer and the enrichment process using selenite. The incubation process lasts for 24 hours at 37oC. The results of this study indicate that the contamination of microorganisms in beef sausage products taken from traders in Kartasura Market, Sukoharjo, Central Java, the three samples meet the standards set by BPOM in Regulation No. 16 of 2016 concerning Microbiological Criteria in Food.
