Abstract

Broiler chicken is a type of superior breed that has the ability to produce meat with relatively fast keeping time. Broiler chicken meat has a relatively low cholestrol content making it safe for people with hypertension. The purpose of this study was to determine yhe limits of the ALT value and Escherichia coli contamination in broiler chicken meat in accordance with SNI regulations. ALT method is a method that shows the number of mesophyll bacteria in every 1ml or 1 gram of sampel examined. As for the principle of ALT is crunching mesophyll aerobic bacterial colonies after it is planted in a medium that is suitable for pouring, then allowed to stand until solidified and incubated for 24-48 0celsius. Escherichia coli identification was carried out by the plate countmethod using selective media in the form of Endo Agar. The results of planting on selective media continued with Gram staining and biochemical tests. ALT test results on broiler chicken samples A,B dan C are 2,8 x104 cfu/gram, 4,9 x104 cfu/gram, dan 3,0 x103 cfu/gram. the three samples tested did not meet teh specified standard because it was greater than 1x101 . The results of identification of Escherichia coli of broiler chicken meat obtained results of sampels A,B dan C positive contaminated with Escherichia coli.
