Abstract
Ascorbyl Palmitate is a derivative of vitamin C with low polarity that has antioxidant activity. Antioxidants are compounds that work to neutralize the increase in free radicals. This study aims to determine the ascorbil palmitate can be made serum preparations that meet the physical characteristics of serum and determine the serum formula of ascorbil palmitate with stable variations of sodium gluconate during the storage process. Serum Ascorbyl Palmitate was made in 3 formulas with variations in the concentration of sodium gluconate 0.10%; 0.20%; and 0.30%. The formula that has been made then tested the characterization of the preparations including organoleptic test, pH test, viscosity test, storage stability test and antioxidant activity test. The results showed that the ascorbyl palmitate made with serum preparations with the results of the serum physical characteristics in the organoleptic test were gel-shaped, yellowish white and characteristic of ascorbil palmitate. The pH test results and the viscosity test results meet the serum characteristic requirements. The results of the stability test in formula 3 were physically stable during the storage process and in the testing of the antioxidant activity of ascorbil palmitate powder IC50 values were 52.67 ppm.
