Abstract
Shrimp shells contain chitin compounds which can be isolated into chitosan which is used as antibacterial through three stages, namely deproteination, demineralization, and deacetylation. This literature study aims to determine the effectiveness of chitosan against bacteria in vitro. Literature study was carried out in several stages, namely, formulating problems, data collection, data evaluation, data analysis and interpretation and data synthesis. The sources used were 16 journals published in 2010 until 2020 and in accordance with inclusion and exclusion criteria using international journals from publishers such as Science Direct, PubMed, NCBI, Elsevier and national journals publishers such as the Portal Garuda. The results of literature studies on journals related to shrimp chitosan have the greatest antibacterial potential, namely the Escherichia coli group with an inhibition zone of 28,83 mm, as well as journals related to shrimp shells which have peaks that correspond to chitosan, which contain OH, CH functional group, C = O and NH by FTIR spectrophotometry.
