Abstract

Pectin is a broad-spectrum antimicrobial capable inhibit both Gram positive and Gram negative bacteria. Research of pectin is a natural antimicrobial, because it is driven by the emergence of drug-resistant bacteria and fungi. Pectin extraction with various orange peels, types of solvent, methods and tests of antibacterial activity against Staphylococcus aureus have been carried out. The purpose of this study was to determine the source ot orange peel, the type of solvents, and the proper method for extraction pectin, as well as antibacterial activity of the pectin product against Staphylococcus aureus. This study used a literature search strategy method, inclusion and exclusion criteria, as well as study selection and quality research. This study uses secondary data obtained not by direct observation, but data obtained from the results of research that has been conducted by previous researchers. Secondary data sources obtained are journals or articles related to topics carried out using a database through Google Scholar. Result research in a search of 10 journals, showed that the pectin peel of grapefruit using HCI with conventional methods and Sukade orange peel pectin using zinc nitrate and 0,2 M NaOH solution with the copresipitation method can inhibit Staphylococcua aureus. The conclusions of the previous research indicated that the copresipitation method with zinc nitrate and 0,2 M NaOH solution was the right method and solvent in extracting pectin and pectin extract derived from citrus peel had the best antibacterial activity against Staphylococcus aureus bacteria.
