Abstract

Chitosan is the result of isolation of chitin from white shrimp shell waste through the stages of deproteinization, demineralization, and deacetylation. Chitosan contains lysozyme enzymes and aminopolysaccharide groups (-NH2). The content changes the structure of the bacterial cell wall by blocking the flow of nutrients to the bacteria. Salmonella typhi bacteria can cause typhoid fever. The purpose of this study was to isolate and analyze the inhibitory potential of white shrimp shell chitosan as an antibacterial for Salmonella typhi ATCC 13311 in vitro. This well diffusion method was used in testing the antibacterial activity of white shrimp shell chitosan using several concentrations, including 0.2%, 0.4%, and 0.8%. The solvent used in this study used acetic acid solution. Chitosan characterization using FT-IR spectrophotometry. The characterization of chitosan using FT-IR spectrophotometry showed that the degree of deacetylation reached 70.46%. Testing the antibacterial activity of chitosan against Salmonella typhi bacteria ATCC 13311 resulted in a strong inhibition zone of 19,6 mm indicated at a concentration of 0.8%.
