Abstract

The level of people’s foudness for consuming karak is still quite high. Food Additives (BTP) are usually to give a distinctive chewy effect to the dough so that food products with better physical properties and longer lasting can be produced, one of the dangerous BTP that are often added in the manufacturing process of karak namely borax. This study aims to determine the karak circulating in the market Ir. Soekarno Sukoharjo whethwer it contains borax or not, and to find out. This research was conducted using qualitative analysis methods. Borax analysis was carried out using the color test, flame test, and precipitation test. The color test was carried out with the turmeric paper test, the curcumin reagent test and the ammonia vapor test. The test was carried out using AgNO3 solution and the test using BaCl2 solution. Each test performed wa compared with a positive control namely borax solution. The positive control test works as a comparison between the sample and standart borax solution, if the results are the same, it can be declared positive for containing borax. The results of this study showed that 8 positive samples contained borax and 1 sample did not contain borax. The karak that does not contain borax meets the requirements, while the karak that contains borax does not meet the quality requirements of food additives in its manufacture. Karak quality requirements are regulated in SNI 01-4307-1996. Keywords: Karak,Borax, Qualitative Analysis
