Abstract
Grilled meatball is a type of meat that is mashed with a mixture of flour and spices served by stabbed with a skewer and grilled over charcoal. This study aims to determine the presence or absence of pathogenic bacteria in grilled meatballs circulating in Jaya Wijaya Park, Surakarta City and to determine whether grilled meatballs circulating in Jaya Wijaya Park, Surakarta City meet BPOM requirements. The method used in this study is the method of counting the plates in duplicate on the surface of the media to test ALT, Staphylococcus aureus, Salmonella sp. Test methods for confirmation of bacteria Staphylococcus aureus using Mannitol Salt Agar (MSA)and Salmonella sp media using media Salmonella Shigella Agar (SSA), Gram staining, and biochemical tests. According to the BPOM regulation No. 13 of 2019 on the maximum limit microbial contamination in processed meat products, namely ALT 106 colonies / g, Staphylococcus aureus 2 x 102 colony / g Salmonella Negative / 25g. The results of the ALT test showed samples A (4.1 x 105) and B (5.0 x 105) and C (2.1 x 106). Pathogenic bacteria contamination test results showed bacteria contamination was Staphylococcus aureus found in samples A (9.0 x 102), B (2.1 x 104), and C (3.1 x 104). Meanwhile,contamination was Salmonella sp found in samples B (1.5 x 102) and C (4.1 x 102). Based on the research results of grilled meatballs from 3 traders in Jaya Wijaya Park, Surakarta City samples B and C did not meet BPOM requirements because they found contamination of the pathogenic bacteria Salmonella sp.
