Abstract
Microencapsulation is a process using a relatively thin coatings on small particles of solids or liquid droplets and liquid dispersions, Where the particle size ranges from 1-5000 μm. The microcapsules are prepared from a single or more core substance in solid or liquid form surrounded by a capsule wall. Capsule wall is a polymer matrix which it is encapsulated with a homogeneously dispersed material. The polymer used should be able to decompose well in the body into harmless ingredients. Microencapsulated carrot seed oil was prepared by using polymer of sodium alginate by evaporation emulsion method with polymer concentration of 0.5%, 1% and 2%. Evaluasi yang dilakukan terhadap sedian meliputi uji organoleptis, uji viskositas, uji pH, uji stabilitas, uji ukuran partikel dan indeks polidispersi, uji stabilitas, uji TEM dan morfologi mikroskop. The results of this study addressed polymer concentrations that resulted in the smallest size of the microcapsule at a concentration of 0.5% with a yield of 1.61 μm, PI 0.231. Microcapsules with 0.5% polymer concentration also indicate that carrot seed oil can be coated seen from TEM test results. Keywords: microencapsulation, sodium alginate, evaporative emulsion, TEM
