Abstract
Large green chili is a plant belonging to the solanaceae family that contains reducing compounds including flavonoids and vitamin C that function for the health of the human body. The purpose of this study to determine the levels of reductants in large fresh green chili and powder in reducing iodine. Large fresh green chili and powder were extracted using 70% ethanol solvent, then the sample was filtered to obtain the test juice and then qualitative and quantitative tests were carried out. Qualitative test to identify the content of reductants compared with vitamin C in the reducing ability of reagent solutions benedict, KMnO4, cupri sulfate. Quantitative tests were conducted based on redox reactions using iodine spectrophotometrically UV-Vis, through the stages of determining the maximum wavelength, operating time, calibration curve, and determination of reductant levels of fresh and powdered large green chili samples. The results of the data were processed using linear regression equation y = a + bx. Qualitative test results of samples of fresh and powdered large green chili contain reducing compounds with an average content of reducing agents in fresh large green chili is 0,01723% per 0.5 g and powdered large green chili is 0,01717% per 0.5 g.
