Abstract
Red pepper is one of the vegetables that contain secondary metabolite compounds that are efficacious as antioxidants, namely reducing compounds. Reducing compounds can react with oxidizing compounds such as iodine. The purpose of this study was to determine the levels of reductants in fresh and powdered/dried red peppers based on redox reactions with I2 spectrophotometriy. Fresh red pepper and red pepper powder/dry dissolved with 70% ethanol and then filtered to produce a test juice. Furthermore, a qualitative identification test of the content of reducing β-carotene by thin layer chromatography, the content of polyphenolic compounds, ascorbic acid and vitamin E with color reagents. Quantitative test of reducing compound content is done by reacting excess iodine solution, the remaining iodine is observed by UV-Visible spectrophotometry, through several stages, namely determining the maximum lamda, operating time, calibration curve which is then used for determination of reductor levels in fresh and powdered/dried red pepper samples. The results of the data were processed using the linear regression equation y = a + bx, against the residual iodine after reacting with standard ascorbic acid solution. The results showed that fresh and powdered/dried red pepper samples contained carotenoid reducing compounds, polyphenols, ascorbic acid, and vitamin E. Content of reductant in fresh red pepper and powder/dry based on the calculation of the amount of residual I2 in a row is (0,0267 ± 0,000163) % and (0,0230 ± 0,000377) %.
