Abstract

Carrot seed oil is the oil obtained from the seeds of carrots, carrot seed oil has the largest content is 66% essential oil, sesquiterpenes and carotene. This study aims to protect the carrot seed oil content is easily damaged if exposed to light and to improve the stability of the oil to be made microencapsulation. The study was conducted using diffusion emulsion, the emulsion diffusion methods, namely the merger between the organic phase, the aqueous phase and the phase of dilution. the sample used is oil carrot seed with a coating polymer PVA (polyvinyl alcohol), PVA which aims to protect the oil from outside influences, testing microcapsules include organoleptic test, morphology of the microcapsules in the light microscope, pH, viscosity, density, TEM, centrifugation, size globule and polydisperse index, the stability of the preparations. The results of the testing that has been encapsulated carrot seed oil were tested with TEM.The results of polymer concentrations showed superior results in the preparation of the microcapsules is a concentration of 1% with a particle size of 4, 140 μm with PI 0, 278 and Zeta potential -17, 4 Mv.
