Abstract
Carrot seed oil is categorized as essential oil, which is easily afffected by enviroment condition. Then to overcome this problem is made microencapsulation of carrot seed oil. Microcapsule is a storage system with chemical compounds as the core and is surrounded by skeletons and membrane. The preparation of microcapsules by nanoprecipitation method. The principle of preparation of microcapsules is by dripping the organic phase into the water phase continuously with stirring to dispersion is formed. Carrot seed oil as a core and a coating which used are sodium alginate and Tween 80, polymers. Microencapsule was tested includes organoleptic and microscopic tests, TEM, particle size, centrifugation, pH, viscosity, density and stability for 1 month. The result showed that 0.5 % of sodium alginate concentration yielded good microcapsule. This is based on microscopic test seen many globul with uniform size, TEM photo looks like happened encapsulation and an average particle size of 2,192 µm with a polydispersion index of 0,675.
