Abstract

Nata de coco is a type of beverage component which is a cellulose compound (dietary fiber) produced from coconut water through a fermentation process, involving microorganisms known as Acetobacter xylinum. This test was conducted at the Setia Budi Surakarta University laboratory, in January 2018. This test used 2 samples of nata de coco with different products where code A was from Supermarket and code B from traditional market. Testing of nata de coco is done based on the limits of the Indonesian Food and Drug Administration in 2016. Testing includes the test of Most Probable Number (MPN) and Salmonella sp Test. Based on the results obtained on the sample nata de coco A qualified, while the sample nata de coco B does not meet the bacteriological requirements set by the Food and Drug Administration of the Republic of Indonesia Year 2016.
