Abstract
Turkey berry is one of nutritious plant that used as traditional medicine and one of the healthy food sources that containing vitamin C. Vitamin C is an essential vitamin and important for body but it is can damaged by heat. Purpose of this research is to determine a reduction in vitamin C levels in turkey berry fresh and boiled. Research started from qualitative analisys followed by quantitative test with spectrophotometry. Variation of vitamin C standard concentration is 4.44 μg / ml; 6.66 μg / ml; 8,88 μg / ml; 11,1 μg / ml; 13,32 μg / ml yielding equation y = 0,083 + 0,04586x with value R = 0,999901. Maximum wavelength is measured at 240-280 nm and operating time for 20 minutes. The results of qualitative analisys showed that sample is containing vitamin C. Quantitative test resulted in a fresh sample rate of 0.226% w/w and a boiled sample of 0.161% w/w. The data were analyzed by paired sample t-test and showed that there was significant difference in vitamin C content in fresh and boiled turkey berry specified by UV spectrophotometry.
