Abstract

Spinach is a great source of vitamin C in vegetables. Vitamin C is a nutrient that acts as an antioxidant and effectively overcomes free radicals that can damage cells or tissues. The purpose of this research is to know the formation of color with reagent 2,6-dichlorophenol indofenol and determination of vitamin C concentration by UV-Vis spectrophotometry This research uses variation of treatment that was raw, boiled and fried. Each sample was weighed 25 g and then dipped in a purpose to determine vitamin C content in spinach leaves by UV-Vis spectrophotometry with reagent 2,6dichlorophenol indofenol, and compare the result of variation treatment spinach leaves. In this study vitamin C levels were analyzed by using Spectrophotometric UV-Vis method at 535 nm wavelength with reactant 2,6-dichlorophenol indofenol. The result of vitamin C analysis on spinach leaves by using Spectrofotometric UV-Vis method with reagent 2,6-dichlorophenol indofenol on different treatment obtained is the level of raw spinach leaves 0,07 %, boiled 0.0207 %, and fried 0.0037 %. Treatment variation of vitamin C levels has an influence on vitamin C content in spinach leaves. Keywords: vitamin C, green spinach, UV-Vis spectrophotometry, 2,6dichlorophenol indophenol.
