Abstract
Undur-undur as a group of Crustaceae, has the content of omega-3 fatty acids EPA and DHA are quite high. DHA and EPA are essential fatty acids required by the body to help the process of metabolism. The research was initiated by sampling undur-undur at the Parangtritis beach, Bantul, Yogyakarta. Samples were first washed with water, and then the samples are grouped into 3 samples of raw, steamed samples and sampel was dried sunshine. Samples were extracted by extraction method, aimed to obtain a fatty acid derivative used a solvent petroelum ether. Analysis carried out by gas chromatography mobile phase Nitrogen gas. Levels of omega-3 percent of calculated by the equation relative and analyzed test Shapiro Wilk test for normality test. Base on the results it was levels of omega-3 crude extracts of 1,346 g/100g, steamed extract of 1.433 g / 100 g and a dry extract of 0.631 g / 100g.
