Abstract
Keluwak is the seed of pangi (Pangium edule Reinw) plant known to Indonesian people as the traditional spice; cyanide acid containing in keluwak is a very hazardous toxic compound. Keluwak used by the people is the ripe self-falling that is then fermented. Young keluwak contains high hazardous cyanide; some farmers likely pick raw keluwak containing high cyanide to be sold in the market. The analysis of cyanide acid on keluwak in Mojosongo market (A), Nusukan market (B), and pasar legi (C) was conducted qualitatively and quantitatively with three varying types of keluwak. The qualitative test was conducted using picrate paper method and the quantitative one was conducted using Volhard Argentometry method The result of qualitative test showed the presence of cyanide acid in A, B, and C keluwak positively containing cyanide: in keluwak A (1, 2, 3), B (1), and C (1,2). From the quantitative test on cyanide acid in keluwak, it could be found the mean level of cyanide acid (HCN) of 309.81 mg/kg in (A1) sample, 331.05 mg/kg (A2), 33.33 mg/kg(A3), 109.34 mg/kg (B1), 75.07 mg/kg (C1) and 66.28 mg/kg (C2).
