Abstract
Sausage is a processed meat product that contains high nutritions. Sausage included as one of the favorite processed meat product because it’s a ready to eat food and easy to find it. Salmonella sp is a bacteria that have a straight pole shape, negative gram, and didn’t form spore. Disease that caused by Salmonella sp called salmonellosis. Purpose of this research is to identify Salmonella sp bacteria on beef sausage that sold in some Traditional Market and Modern Market in Sukoharjo. Research of this sausage done in Laboratory of Universitas Setia Budi (Setia Budi University) on December 2015. Sausage samples taken from 4 traditional markets and 4 modern markets in Sukoharjo with 2 samples from each place. Salmonella identification use isolation method that using media like Buffer Pepton, Sellenit, BSA, dan Biochemical test media. Based on Salmonella identification research results known that beef sausage samples from traditional markets and modern markets Salmonella sp are not found. Keywords : Sausage, Salmonella sp.
