Abstract

Antioxidant is one of the compounds that can inactivate free radical. Noni fruit (Morinda citrifolia L.) contains alkaloid, flavonoid, polyphenol and saponin. Flavonoids can be useful as an antioxidant. The purpose of this study was ti find out determine the optimum proportion of sorbitan 80 and polysorbate 80 in making optimum formula of cream O/W noni fruit with Simplex Lattice Design method and determine the activity of noni fruit extract cream as a antioxidant. Noni fruit was extracted using maceration with solvent ethanol 96%. Noni fruit extract was made in cream with various concentrations in formula, formula A (5,25% sorbitan 80 : 1,75% polysorbate 80), formula B (3,5% sorbitan 80 : 3,5% polysorbate 80), formula AB (1,75% sorbitan 80 : 5,25% polysorbate 80). Analysis of the test result of the three physical quality test parameters were conducted by design expert 8.0.6 method for making optimum formula. The third formula and the optimum formula obtained were conducted tested for the antioxidant activity against DPPH measured by spectrophotometer UV-VIS at wavelength 516 nm and determined the IC50 value. The results showed that cream of noni fruit extract (Morinda citrifolia L.) had absorber antioxidant activity of free radical. Antioxidant activity in the form of optimum cream preparation 209,267 ppm lower than in the form of pure extract with IC50 value was 51,999 ppm. Formula optimum of sorbitan 80 and polysorbate 80 mixture from noni fruit extract found in 49% sorbitan 80 with 3,446 gram and 51% polysorbate 80 with 3,554 gram.
