Abstract

This study aims to determine the antioxidant activity of local corn seed and sweet corn seed, to find out how much antioxidant activity of local corn seed extracts and rim sweet corn kernels extracts and find out whether local corn kernels and sweet corn seed extracts can be made in cream preparations which has good physical quality. This research was started by extracting local corn kernels and sweet corn kernels with maceration method using ethanol 96% to determine. Local corn kernels and sweet corn kernels extracts were tested for antioxidant activity by using the DPPH method. Local corn kernels extract and sweet corn kernels were made in cream preparations and their antioxidant activity was tested again after testing the physical quality of the cream including homogeneity, pH, adhesion, dispersion, and Freeze and thaw. The results obtained from the extract of local corn kernels and sweet corn kernels contain flavonoids and phenolic. The results of the antioxidant activity of local corn seed extract obtained by 41.27 ppm and sweet corn seed extract by 44.27 ppm antioxidant values decreased in the testing of cream preparations, local corn seed extract creams had antioxidant activity values of 148.17 ppm and in the preparation of corn seed cream sweet 193.77ppm, the results of the physical quality testing of the cream showed the preparation of local corn seed extract cream and homogeneous sweet corn seed extract cream, with normal pH values, have poor adhesion, good dispersion and are a stable cream in the Freeze and thaw Keywords: Local corn seeds, sweet corn seeds, creams, antioxidants
