Abstract

Soy milk is a soy bean extract, contains kabohid, high in protein, and low in fat. Good microorganisms in soy milk are Lactobacillus bulgaricus and Bifidobacterium. The harmful bacteria are Salmonella sp., Enterobacteriaceae. Microbial contamination of soy milk can cause gastroenteritis, and respiratory infections. This study to determine the amount of microbial soybean milk by Total Plate Number test on Nutient Aagar, identification of bacteria Enterobacteriaceae by Most Probable Number method with lactose borth media. Identification of Salmonella sp. through the pre-enrichment stage in media buffer pepton, enrichment in the selenit broth, planting the scratch method on Salmonella Shigella Agar, Gram staining and biochemical tests. Samples were obtained from traders (A, B, C, D) in the Mojosongo sub-district, Surakarta. The results showed the Total Plate Count values of samples A, B, C, D exceeded the BPOM threshold number 13, 2019 with the permissible microbial contamination limit, namely ALT 104 colonies/mL. The four samples were negative Salmonella sp., But positive for the bacteria Enterobacteriaceae. Keywords: soy milk, ALT, Enterobacteriaceae, Salmonella sp.
