Abstract
Red dragon fruit peel ( Hylocereus polyrhizus ) contains compounds tannin, alkaloids, flavonoids and saponins which has antibacterial activity. This study aims to determine the antibacterial activity of red dragon fruit peel extract against the bacteria Streptococcus mutans, Staphylococcus aureus, Escherichia coli, and Streptococcus pyogenes . This research was conducted in several stages, namely plant determination , shrinkage drying test of red dragon fruit peel powder, extraction by maceration method using 70% ethanol solvent, literature review on the content contained in red dragon fruit peel extract and antibacterial activity of red dragon fruit peel extract which can inhibit the bacteria Streptococcus mutans, Staphylococcus aureus, Escherichia coli, and Streptococcus pyogenes . The results were obtained is the result of drying shrinkage percentage obtained powder drying shrinkage is 3 , 7 % and the yield of maceration red dragon fruit skin extracts by 22.57% . Based on literature review a red dragon fruit peel extract can inhibit the growth of Streptococcus mutans, Staphylococcus aureus, Escherichia coli, and Streptococcus pyogenes. Tannin compounds, alkaloids, flavonoids, and saponins contained in the skin of red fruit are thought to inhibit bacterial growth. The mechanism of these antibacterial compounds is different. Tannins interfere with peptidoglycan synthesis, alkaloids interfere with the constituent components of peptidoglycan in bacterial cells, flavonoids inhibit bacterial growth, and saponins cause leak cells.
