Abstract

Benzoic acid (C6H5COOH) is a widely used preservative and is often used in acidic foods and beverages. The salt solubility is greater or better than the acid, so it is commonly used in the form of its salt, namely sodium benzoate. The purpose of this research is to know the drink of apple juice that circulate in Surakarta area contains benzoic acid, grade of benzoic acid in apple juice, and grade of benzoic acid in apple juice wich is used is not yet fulfill the requirement of benzoic acid level in Regulation Head of BPOM RI No. 36 of 2013. This research method uses spectrophotometri UV-Vis to examine benzoic acid in apple juice. Maximum wavelength and operating time data obtained from the standard benzoic acid p.a. The results of the analysis of apple juice on a maximum wavelenght measurement of 272 nm showed different levels. Benzoic acid content of sample A= 313,2133 mg/kg, B= 124,3199 mg/kg, and C= 477,2490 mg/kg. Levels of benzoic acid from three samples meet the standard of Regulation Head of BPOM RI No. 36 of 2013 no more than 600 mg/kg. Keywords : benzoic acid, apple juice drink, Spectrophotometri UV-Vis
