Abstract

Tofu is a source of protein and easily is undergoing putrefaction, so it needs the addition of an ingredient a preservative to life can persist longer. The use of formaldehyde as a preservative forbidden in accordance PERMENKES No. 33 of 2012, but in reality there are still a lot of food including know containing formaldehyde. The purpose of this research is to examine whether or not there will formaldehyde content that is added to its know sold in the weekly market Jaten Regency Karanganyar. Taken as many as 15 sample of tofu sold at the Karanganyar Regency Jaten market. The qualitative analysis test of formaldehyde in the tofu samoel used 0,5% chromatophoric acid reaction, Schiff reaction, Tollens reaction, Fehling A Fehling B. qualitative test results with chromatophic acid showed the formation of a color change of the solution to typical purple. In the Schiff reaction test it is shown that the color of the solution becomes purplish red. In the tollens reaction test, the formation of metallic silver mirrors was shown. In the fehling A and Feh- ling B reaction tests, the formation of red brick deposits was shown. Furthermore, boiling was carried out on the formaldehyde to see changes in formaldehyde con- tent by observing whether there was a qualitative change in formaldehyde content. The study showed that out of 15 tofu samples, there were 10 tofu samples containing formaldehyde, and subsequently after boiling in 10 tofu samples for- maldehyde shows that it cloud eliminate the formaldehyde content that was ob- served qualitatively.
