Abstract
Milk is a source of animal protein that humans. Fresh cow’s milk needed to meet human needs must be of high quality, one of which is protein. The reality in the field of fresh cow’s milk is sometimes diluted. The purpose of this research is know the difference of milk protein content of milk from milkker, KUD and the seller. In the research using Lowry method. Test method using instrument of Spectrophotometer UV-Vis by making standard curve of Bovine Albumin Serum (BSA). The Lowry method is the Lowry method is more sensitive due to standard solutions derived from protein serum albumin and protein samples can analyze which dissolves in the eit. Reduction of fosfomolibdat acid and fosfotungstat acid by tyrosine and triphosphane which is a protein residue. Based on the results of this study protein levels from milking, KUD and the seller there is a real difference. Highhest protein content in fresh milk from a milker followed by KUD and the seller with consecutive values 3,43 %, 2,56 % dan 1,49 %.
