Abstract

Milk has a very important content, namely water, dry matter, fat, protein, casein, lactose, minerals, vitamins, fatty acids and other organic compounds. This study aims, among other things: to determine the levels of protein and lactose found in brand X milk products from the Plaosan area, Magetan Regency, whether they meet the SNI requirements In this study, sample products were used from the Plaosan area, Magetan Regency. Samples were tested for protein content determination using the Kjeldahl method and lactose determination test using the Luff Schoorl method which needs to be verified first. The results of % protein and lactose levels obtained from brand X milk are seen to meet SNI requirements or not. The results of this study are shown by the titration volume seen at the Titration End Point (TAT) which is useful for obtaining the % concentration value. The percentage of protein content meets the SNI standard requirements, namely a value of 2.7% ≈ 2.7% with a significance value of the t test of 0.530 > 0.05. The percentage of lactose levels does not meet the standard, namely a value of 1.35 g/100 g < 4.8 g / 100 g with a t-test significance value of 0.00 < 0.05.
