Abstract
Mole crabs (Emerita emeritus) contains omega-3 was good for human health. Granule formulation mole crabs used red rice flour as a filler and a combination of garlic powder and onion as a spice variation. This study aimed to determine the effect of the combination of onion powder and garlic on the physical properties of the granules and evaluation of the taste response. The granules mole crabs made into three formulas using wet granulation method with a ratio of powder garlic and onion for, namely FI (25 g: 5 g), F II (15 g: 15 g), and F III (5 g: 25 g). The granules tested physical properties and perceptive sense then analyzed with one-way ANOVA statistical test. The best formula was the formula I. Knowing from the results of the physical properties of the granules mole crabs shows that the more the number of garlic powder caused a granule increasingly favored. Results of the analysis showed no significant differences in the physical quality test granules and no significant differences in response test taste. The granules produced meets the requirements of physical properties of the granules. Kata kunci : mole crabs, granulation, omega 3, onion, garlic
